YOUR ASSIGNMENT

CASE 001: [RECIPE NAME]

Your job is simple: bake the assigned recipe once, document what happens, and report back.

Use your own active starter and follow the recipe as written. Don’t try to make your loaf match anyone else’s. We want to know what happens when the same instructions meet five different starters, bakers, kitchens, and conditions.

FIELD REPORT DUE: OCTOBER 20

TESTING PROTOCOL

This is an experiment, so consistency matters. Follow the assigned recipe as written unless the instructions specifically give you a choice.

Use your own starter, your own equipment, and your normal kitchen setup. Record what you actually do—not what you think you were supposed to do.

If something goes sideways, don’t fix the story. Tell us what happened. A strange result is still a result.

PAY ATTENTION TO:

• Dough temperature and room temperature
• Timing and fermentation
• How the dough looks, feels, and behaves
• Any adjustments you make—and why
• The finished loaf: rise, crust, crumb, aroma, and flavor
• Anything that surprises you

We are not testing the baker. We are testing what happens.

FIELD NOTES

Don’t trust yourself to remember everything later. Keep notes while you bake.

Photos don’t need to be pretty. Notes don’t need to be polished. We want the evidence you actually saw in your kitchen.

DOCUMENT:

• Your starter before mixing
• The dough after mixing
• At least one point during bulk fermentation
• The dough before baking
• The finished loaf
• The crumb after cooling

Jot down times, temperatures, observations, surprises, and any decisions you make along the way.
